Mushroom Cream and Barley Soup Recipe

Ingredients

2 stalks - celery, finely chopped
1/2 cup - pearl barley
4 1/2 cups - reduced-sodium chicken broth or mushroom broth, divided
1 oz. - dried porcini mushrooms
2 cups - boiling water
2 tsps - low-fat and salt-reduced butter
1 tbsp - extra virgin olive oil
1 cup - minced shallots
8 cups - canned mushrooms
1 tbsp - minced fresh sage
1/2 tsp - salt
1/2 tsp - freshly ground pepper
2 tbsps - all-purpose flour
1 cup - dry sherry
1/2 cup - reduced-fat sour cream
1/4 cup - minced fresh chives

Preparation


  • In a small saucepan over a high heat, bring the barley and 1 1/2 cups of broth to a boil. Cover and reduce the heat to low and simmer until tender, about 30 to 35 minutes.
  • While your broth and barley are simmering, combine dried mushrooms and boiling water into a medium bowl and soak them until they're softened, about 20 minutes. Line a sieve with paper towels, set it over a bowl, and pour the mushrooms and soaking liquid. Keep the soaking liquid. Move the mushrooms to a cutting board and chop them up finely.
  • Heat the butter and oil in a Dutch oven over a medium-high heat. Add shallots and cook them while stirring often, until they are soft, about 2 minutes. Add canned mushrooms and cook, again stirring often, until they begin to brown. This takes about 8 to 10 minutes.
  • Add to this the chopped porcini mushrooms, celery, sage, salt, and pepper, and cook together, still stirring often, until it all begins to soften. About 3 minutes. Sprinkle flour over the veggies while stirring and cook until the flour is fully absorbed. This takes about 1 minute. Finally, stir in the sherry and cook until most of it has evaporated, about another minute.
  • Add the soaking liquid and the remaining 3 cups of broth. Increase the heat to high and bring it all to a boil. Reduce heat and simmer, stirring occasionally, until the soup thickens up in about 18 to 22 minutes.
  • After this time, add the cooked barley and continue cooking your mixture, stirring occasionally until heated through, for about 5 minutes. Remove from the heat and stir in sour cream until it's absorbed well. Finish by garnishing with the chives.
